To repeat: almost of the population surveyed described sometimes searching for content that was half not only not interesting to them before, but that they may have “considered disgusting”. How’s this happening? Today’s pornography is different. We instantly access limitless novel sexual content through free porn tubing sites emerging in ~2005. With our greater computing power in tandem with today’s Internet speeds, we streamline the endless novelty offered in these tubing sites. We watch many videos in each sitting. Zimbardo found boys on average watched 50 videos a week. With today’s computing power, we rapidly tab switch between different new videos. We can rewind and fast forward according to our sexual tastes. The result? An incredible amount of novelty based mental stimulation. An unnatural, abnormally large release of dopamine, greater than that in partnered monogamous sex. The issue is this abnormal release of dopamine may cause dopamine receptors to wear down over time. Then you don’t derive the same kick from the content you viewed before. You then may seek more novelty, through different types of content, to experience that same kick, that same dopamine burst we’ve become dependent on. Desperately seeking to find that dopamine fix, we find our minds somehow aroused by content we didn’t find arousing before. This could mean content of a sexual orientation we didn’t find ourselves naturally interested in before and we still don’t find interesting after ejaculating. This could also involve sex with animals. It can involve incredibly violent content. This has not been proven, but maybe wearing down of old forms of attraction inculcates new sexual states not only in porn but in the real world as well. So, if you’re watching porn, watch out. It’s instantly accessible and insanely stimulating. Meaning, it’s really hard to resist using maximally. The problem is maximalist use may lead you down a path that may not be good for you. Along the way, your dopamine receptivity may be impacted- you may be less stimulated by normal life. It’s hard to change your behavior when you don’t understand the consequences. Now you do. His shipboard diet had turned his interior into a perfect gulf. The repast, which was more Danish than Icelandic, was in itself nothing, but the excessive hospitality of our host made us enjoy it doubly. The conversation turned upon scientific matters, and M. Fridriksson asked my uncle what he thought of the public library. "Library, sir?" cried my uncle; "it appears to me a collection of useless odd volumes, and a beggarly amount of empty shelves." "What!" cried M. Fridriksson; "why, we have eight thousand volumes of most rare and valuable works—some in the Scandinavian language, besides all the new publications from Copenhagen." "Eight thousand volumes, my dear sir—why, where are they?" cried my uncle. "Scattered over the country, Professor Hardwigg. We are very studious, my dear sir, though we do live in Iceland. Every farmer, every laborer, every fisherman can both read and write—and we think that books instead of being locked up in cupboards, far from the sight of students, should be distributed as widely as possible. The books of our library are therefore passed from hand to hand without returning to the library shelves perhaps for years." "Then when foreigners visit you, there is nothing for them to see?" "Well, sir, foreigners have their own libraries, and our first consideration is, that our humbler classes should be highly educated. Fortunately, the love of study is innate in the Icelandic people. In 1816 we founded a Literary Society and Mechanics' Institute; many foreign scholars of eminence are honorary members; we publish books destined to educate our people, and these books have rendered valuable services to our country. Allow me to have the honor, Professor Hardwigg, to enroll you as an honorary member?" My uncle, who already belonged to nearly every literary and scientific institution in Europe, immediately yielded to the amiable wishes of good M. Fridriksson. "And now," he said, after many expressions of gratitude and good will, "if you will tell me what books you expected to find, perhaps I may be of some assistance to you." I watched my uncle keenly. For a minute or two he hesitated, as if unwilling to speak; to speak openly was, perhaps, to unveil his projects. Nevertheless, after some reflection, he made up his mind. "Well, M. Fridriksson," he said in an easy, unconcerned kind of way, "I was desirous of ascertaining, if among other valuable works, you had any of the learned Arne Saknussemm." "Arne Saknussemm!" cried the Professor of Reykjavik; "you speak of one of the most distinguished scholars of the sixteenth century, of the great naturalist, the great alchemist, the great traveler." "Exactly so." "One of the most distinguished men connected with Icelandic science and literature." "As you say, sir—" "A man illustrious above all." "Yes, sir, all this is true, but his works?" "We have none of them." "Not in Iceland?" "There are none in Iceland or elsewhere," answered the other, sadly. "Why so?" "Because Arne Saknussemm was persecuted for heresy, and in 1573 his works were publicly burnt at Copenhagen, by the hands of the common hangman." "Very good! capital!" murmured my uncle, to the great astonishment of the worthy Icelander. "You said, sir—" "Yes, yes, all is clear, I see the link in the chain; everything is explained, and I now understand why Arne Saknussemm, put out of court, forced to hide his magnificent discoveries, was compelled to conceal beneath the veil of an incomprehensible cryptograph, the secret—" "What secret?" "A secret—which," stammered my uncle. "Have you discovered some wonderful manuscript?" cried M. Fridriksson. "No! no, I was carried away by my enthusiasm. A mere supposition." "Very good, sir. But, really, to turn to another subject, I hope you will not leave our island without examining into its mineralogical riches." "Well, the fact is, I am rather late. So many learned men have been here before me." "Yes, yes, but there is still much to be done," cried M. Fridriksson. "You think so," said my uncle, his eyes twinkling with hidden satisfaction. "Yes, you have no idea how many unknown mountains, glaciers, volcanoes there are which remain to be studied. Without moving from where we sit, I can show you one. Yonder on the edge of the horizon, you see Sneffels." "Oh yes, Sneffels," said my uncle. "One of the most curious volcanoes in existence, the crater of which has been rarely visited." "Extinct?" "Extinct, any time these five hundred years," was the ready reply. "Well," said my uncle, who dug his nails into his flesh, and pressed his knees tightly together to prevent himself leaping up with joy. "I have a great mind to begin my studies with an examination of the geological mysteries of this Mount Seffel—Feisel—what do you call it?" "Sneffels, my dear sir." This portion of the conversation took place in Latin, and I therefore understood all that had been said. I could scarcely keep my countenance when I found my uncle so cunningly concealing his delight and satisfaction. I must confess that his artful grimaces, put on to conceal his happiness, made him look like a new Mephistopheles. "Yes, yes," he continued, "your proposition delights me. I will endeavor to climb to the summit of Sneffels, and, if possible, will descend into its crater." "I very much regret," continued M. Fridriksson, "that my occupation will entirely preclude the possibility of my accompanying you. It would have been both pleasurable and profitable if I could have spared the time." "No, no, a thousand times no," cried my uncle. "I do not wish to disturb the serenity of any man. I thank you, however, with all my heart. The presence of one so learned as yourself, would no doubt have been most useful, but the duties of your office and profession before everything." In the innocence of his simple heart, our host did not perceive the irony of these remarks. "I entirely approve your project," continued the Icelander after some further remarks. "It is a good idea to begin by examining this volcano. You will make a harvest of curious observations. In the first place, how do you propose to get to Sneffels?" "By sea. I shall cross the bay. Of course that is the most rapid route." "Of course. But still it cannot be done." "Why?" "We have not an available boat in all Reykjavik," replied the other. "What is to be done?" "You must go by land along the coast. It is longer, but much more interesting." "Then I must have a guide." "Of course; and I have your very man." "Somebody on whom I can depend." "Yes, an inhabitant of the peninsula on which Sneffels is situated. He is a very shrewd and worthy man, with whom you will be pleased. He speaks Danish like a Dane." "When can I see him—today?" "No, tomorrow; he will not be here before." "Tomorrow be it," replied my uncle, with a deep sigh. The conversation ended by compliments on both sides. During the dinner my uncle had learned much as to the history of Arne Saknussemm, the reasons for his mysterious and hieroglyphical document. He also became aware that his host would not accompany him on his adventurous expedition, and that next day we should have a guide. CHEESE “The chief constituent of cheese is casein coagulated by the action of rennet. But, prepared from casein alone, cheese would be coarse and almost tasteless, and when dry would become as hard as stone. To give tenderness and flavor to the paste-like mass, the cream is commonly retained in milk used for making cheese. The casein furnishes the main substance of the product, while the cream contributes what might be called the seasoning. “Hence we have two principal varieties of cheese: one, prepared with milk from which the cream has been taken, contains only casein; the second, made from unskimmed milk, contains both casein and cream. The first kind, known as cottage cheese, white cheese, or, more expressively, skim-milk cheese, has little food value and is not made for its own sake, but in order to put to some use the milk that has already served to make butter. The second kind, called cream cheese, is what commonly appears on our tables in different varieties and varying appearance, according to the quality of the milk and the mode of preparation. “To make cheese still more unctuous and to give it a finer flavor, we do not always content ourselves with using milk in its natural state; to the cream that it naturally contains we often add some more from milk skimmed expressly for the purpose. The cheeses thus enriched with fatty matter are the most delicate of all. Again, we occasionally adopt a middle course, using neither natural milk nor entirely creamless milk, but of two equal parts of milk we keep one just as it is and skim the other, mixing them together afterward. “By adding or withdrawing, in varying quantities, this fatty constituent of the milk, we obtain as many different varieties of cheese. If also we bear in mind that sheep’s milk has not exactly the same properties as goats’ milk, nor goats’ milk the same properties as cows’ milk; if we remember, further, that the same animal’s milk varies according to the nature of its feed and the care given to the herd; and if, finally, we take into account the different methods of manufacture, of one sort in one place, of another sort somewhere else, we shall understand how numerous may be and in fact are the various kinds of cheese.” “For my part,” Jules interposed, “I know at least half a dozen kinds. There is Roquefort, a pasty cheese streaked with blue and of a sharp flavor; Gruyère, riddled with large round holes and yellowish in color, and clear like quartz; Auvergne, as large as a big millstone and not very delicate in flavor; Brie, in thin, wide cakes that sweat a kind of ill-smelling cream; Mont d’Or, packed with a little [ ]straw in a round deal box; and a lot of others that I can’t remember now.” 318 “Jules has just told us the best known kinds of cheese; I will add a few words on the way they are made. “Fresh cheeses are those that are eaten soon after being made. They are white and soft. They are made of either skimmed or unskimmed milk, and in the latter case they are incomparably better. When the rennet has brought about coagulation, the curdled milk is poured into round molds of tin or glazed earthenware, with holes in the bottom for the escape of the whey contained in the curdled mass. As soon as this has drained enough and is sufficiently firm, the cheese is done, and it is taken from the mold ready for the table without any other preparation.” “That’s the cheese I like best,” Emile declared. “It’s the kind we spread on slices of bread to make those delicious sandwiches.” “That is very true, but it has the fault of not keeping long. In a few days it turns sour and uneatable. All the other cheeses would do the same, all would spoil and become sour if certain measures were not taken to prevent this. These measures consist in the use of salt, which is rubbed and sprinkled on the outside of the cheese, and sometimes even mixed with the curd itself. All cheeses, then, that are to be kept a long time receive more or less salt, while fresh cheese is not salted at all. “Of these salted cheeses some are soft, some hard. [ ]That of Brie, named from the district where the best is made, in the department of Seine-et-Marne, is a large and thin soft cake, made of sheep’s milk. It is salted on both sides with finely powdered salt, and is left to soak for two or three days in the salted liquid that drips from it. The salting finished, the cheeses are packed in a cask with alternate layers of straw, and are left alone for several months. Then there starts a kind of fermentation, which is the beginning of putrefaction, and which develops new qualities. The curd loses its odor and insipid taste of milk-food, to acquire the heightened flavor and strong smell of cheese; its mass becomes more oily, even partially fluid, and changes under the rind to a liquid pap of creamy appearance. This work of modification is called refining. It has gone just far enough when the liquid part under the rind is of a pleasant taste. The cheeses are then taken out of the cask and are ready for eating. 319 “This first example shows us that cheese acquires its peculiar qualities through an incipient deterioration. Before this putrefaction sets in the cheese is simply curd, sweetish, insipid, without pronounced odor; after this process it has the odor, the taste, in fact all that is required to make it really cheese. But the putrefaction, once started artificially, does not stop where we should like it to stop. It goes on all the time, slowly indeed if we take some precautions, and the cheese, smelling more and more, and tasting stronger and stronger, ends by becoming a mass of rottenness. All cheese, therefore, when it [ ]gets too old, is sure at last to go bad; it spoils by continuing to excess the kind of deterioration that in the beginning gave it precisely the qualities desired. 320 “From its appetizing flavor and fine texture Roquefort is the king of cheeses, the prominent feature in any well-appointed dessert. Its renown extends all over the world.” “That’s the cheese that is so strong and takes so much bread to go with it?” asked Emile. “Yes, that is it. Its pronounced flavor and its blue streaks make it easy to recognize. It is made in a village of Aveyron called Roquefort, and is obtained from sheep’s milk only, the best of all milk on account of its richness in casein and butter.” “Brie cheese also,” observed Louis, “is made of sheep’s milk; yet it doesn’t compare in quality with Roquefort.” “That marked difference shows us how much the method of making it determines the quality of cheese. You have just seen what pains are taken with Brie cheese; now see how much care is given to Roquefort. “The cakes of curd are not thin in this case, but as thick as they are wide. They are stored for months in grottoes hollowed in the heart of a rock, either by nature or by man, in the environs of the village of Roquefort. These grottoes are remarkable for the strong currents of air that circulate through them, and for the coolness of their temperature. During the summer, while the thermometer [ ]outside marks thirty degrees, it shows but five inside the cheese caves. The difference is that between the heat of an oppressive summer and the cold of a severe winter. It is in the depths of these cold caves that the cheeses acquire their peculiar qualities. The only care given them is an occasional rubbing with salt and a scraping of their surface to remove whatever moldiness may have developed. This moldiness even gets into the inside by degrees, where it forms blue veins. But that is in no way detrimental; on the contrary, the flavor of the cheese gains by the formation of this mold, which is merely another kind of rotting that adds its energies to those of the usual change undergone by cheese. Hence the makers are not content with letting nature produce these signs of moldiness: they hasten the process by mixing with the fresh curd a little powdered moldy bread. The cheese would be better if left to its own working, but this addition accelerates the result, and to-day, alas, in the making of Roquefort, as in so many other branches of industry, there is greater eagerness for quick results than for excellence. 321 1 “The cheese called Auvergne is made in the mountains of Cantal. Cows’ milk is used. When the curd has formed, the dairyman, legs and arms bare, mounts a table and tramples and compresses with feet and hands the mass of fresh cheese to squeeze out the whey. The curd is then separated, mixed with pounded salt, and pressed in large round molds [ ]containing up to fifty kilograms. These enormous cheeses are finally left in cellars to the action of fermentation, which perfects them. 322 “Gruyère cheese owes its name to a little village in the canton of Fribourg in Switzerland. In the Vosges, Jura, and Ain a great quantity of this cheese is made. This too is made of cows’ milk. The milk, after a third of its cream has been skimmed off, is slightly warmed in large kettles over a brisk fire. Then the rennet is poured in. When the curd has formed, it is separated as much as possible by being stirred in the kettle with a wide paddle, after which it is warmed still further. Finally the curd is collected, placed in a mold, and subjected to strong pressure. The cheese thus produced is next rubbed several times with salt, and then stored in a cellar and left undisturbed for two or three months. It is during its stay in the cellar that the holes or eyes characteristic of Gruyère cheese make their appearance; they are due to bubbles of gas released from the fermenting substance of the cheese. You will notice in the making of this kind of cheese the application of heat. The milk is warmed over the fire just before the rennet is added, which is not done in the other kinds. Hence Gruyère cheese is called cooked cheese. “If kept too long, all cheeses are sooner or later invaded, first on the outside and then within, by mold, yellowish white at first, then blue or greenish, and finally brick red. At the same time the cheese decays and acquires a repulsive odor and a taste so [ ]acrid as to make the lips sore. The cheese is then a mere mass of putrefaction to be thrown on the dung-hill. The rate of decay is proportioned to the softness of the cheese and its permeability by the air. Therefore, in order that it may keep well, it must be carefully dried and also reduced to a compact mass by strong pressure. That is why so much force is exerted in pressing the large cheeses of Gruyère and Auvergne in their molds. But it is nothing in comparison with certain cheeses, called Dutch cheeses, which are noted for their extraordinary lasting qualities. They become so hard and dry that before they can be eaten they sometimes have to be broken up with a hammer and put to soften again in a cloth wet with white wine.” 323 “Those very hard cheeses, as solid as a rock, can’t be of much use,” commented Emile. “That is where you are mistaken. Cooks use this hard cheese to season certain dishes, after grating it to a powder. It is also in favor on shipboard as a valuable article of food on long voyages. The Dutch cheese is round like a ball, and has a reddish rind. THE NORTHEAST PASSAGE THE NORTHEAST PASSAGE Later in Henry the eighth’s reign, in 1527, a larger expedition, composed of “divers cunning men,” set out for Northern discovery, but with no more satisfactory results. Their enterprise was impelled by the weighty reasoning of Robert Thorne, the observant Bristol merchant, then in Seville (whom Hakluyt terms a “notable member and ornament of his country”), in his “large discourse” of that year to Dr. Ley, the English ambassador in Spain, urging the immediate need of English discovery in the north parts, “even to the North pole,” to overcome the advantages gained by Spain and Portugal in their discoveries of “all the Indies and seas Occidental and Oriental,” so “by this part of the Orient and Occident” compassing the world. Who were the “divers cunning men” composing this expedition Hakluyt endeavoured to ascertain through much enquiry among “such as by their years and delight in Navigation” might inform him. He learned, however, of one only, and his name he could not get—a certain canon of St. Paul’s in London, a “great mathematician, and indued with wealth,” apparently the leader. Two “fair ships” formed the squadron, one of them called “The Dominus Vobiscum.” They set forth out of the Thames on a mid-May day. When sailing “far northwestward” one of the ships was cast away as it entered into “a dangerous gulph about the great opening between the North parts of Newfoundland and the country lately called by her Majestie Meta Incognita.” Thereupon the other ship, “shaping her course toward Cape Briton and the coaste of Arambec, and oftentimes putting their men on land to search the state of those regions, returned home about the beginning of October.” So this story lamely ends. Six years later an enterprise for discovery in the same parts was projected by certain London men, with the king’s “favour and good countenance,” under the leadership of one “Master Hore,” a “man of goodly stature and of great courage, and given to the studie of Cosmographie.” Master Hore’s “persuasions” were so effective that he soon drew into the scheme “many gentlemen of the Inns of court and of the Chancerie, and divers others of good worship, desirous to see the strange things of the world.” Two “tall ships” were obtained for the venture, the “Trinitie,” of one hundred and forty tons, which was designated the “admiral” (flag-ship) of the fleet, and the “Minion.” The company numbered about sixscore persons, of whom thirty were gentlemen. Among the latter were enrolled one Armigil Wade, “a very learned and vertuous gentleman,” afterward clerk of the councils of Henry the eighth and his successor, Edward the sixth; one Joy, subsequently gentleman of the king’s chapel; and Oliver Dawbeny, a merchant of London. All were “mustered in warlike manner” at Gravesend. After receiving the Sacrament they embarked and sailed away at the end of April, 1536. The adventures of these gentlemen-explorers were rare and tragic. From the time that they left Gravesend they were more than two months at sea without touching land. At length they arrived in the region of Cape Breton. Shaping their course northwestward they came to the “island of Penguin,” where they landed. This was found to be a place “full of rocks and stones” and inhabited by flocks of “great foules white and gray, as big as geese.” These strange fowls were the sea-birds known as Penguins from their first discovery on this island, and afterward, when appearing in other parts, called Great Auks or Gare-Fowls. The sailors drove large numbers of them into the boats, and they made good eating. Quantities of their eggs were also seen on the island. No natives were encountered by the voyagers till they had lain anchored off Newfoundland for several days. Then one morning while Oliver Dawbeny was walking on the hatches he spied a boat full of savages rowing down the bay toward the ships. A ship’s boat was quickly manned and sent out to meet and take them. But at its approach the savages fled to a neighbouring island up the bay. The English pursued them, but they got away. On the island a fire was found, and by it the side of a bear on a wooden spit ready for roasting. A boot of leather was picked up, “garnished on the outward side of the calf with certain brave trails as it were of raw silke”; also a “great warm mitten.” The voyagers tarried in the Newfoundland seas till famine came upon them. Now the tale becomes gruesome. Temporary relief was had from the stock of a nest of an osprey “that brought hourly to her young great plentie of divers sort of fish.” For a while they lived on raw herbs and roots gathered on the main. Then, the relief from herbs becoming of “little purpose,” some of the hardest pressed, when ashore in companies of two, seeking food, fell to feeding upon their mates. “The fellow killed his mate while he stooped to take up a root for his relief, and cutting out pieces of his body whom he had murthered broyled the same on the coles [fire] and greedily devoured them.” By this means, the chronicler grimly adds, “the company decreased.” The officers on shipboard wondered at this falling off till the fate of the missing was disclosed through the admission of one well-fed sailor, under the goading taunts of a starving mate who had come upon him in a field, drawn thither by the pungent odour of broiled flesh, that the meat upon which he had feasted was a piece of a man’s side. When this report was brought to the captain he called the company together and addressed them earnestly upon the awfulness of such conduct. “If,” he piously argued, “it had not pleased God to have helpen [helped] them in that distresse that it had been better to have perished in body and to have lived everlastingly, than to have relieved for a poore time their mortal bodyes and to bee condemned everlastingly both body and soule to the unquenchable fire of hell.” He besought them all to pray “that it might please God to look upon their miserable present state and for his own mercy to relieve the same.” Still the famine continued unrelieved. At last, in sheer desperation, “they agreed amongst themselves rather than all should perish to cast lots who should be killed.” But the very night of this agreement, “such was the mercie of God” that a French ship well furnished with victuals hove into the harbour where they lay. Their action was prompt. “Such was the policy of the English,” as our chronicler ingenuously puts it, “that they became masters” of the Frenchmen’s craft, “and changing ships and victualling them they set sail to come into England.” In blunter words, they despoiled the Frenchmen of their property and made off with it, leaving them behind; not altogether desolate, however, for they were left with a ship partly provisioned from their own store. The expedition arrived back in England about the end of October, when the gentlemen of the party enjoyed a succession of entertainments, first at a “certain castle belonging to Sir John Luttrell,” afterward at Bath, Bristol, and London. The voyagers told in their reports how they had journeyed so far northward that they had seen “mighty islands of ice in the summer season on which were hawkes and other fowles to rest themselves being weary of flying over far from the main.” And how they had also seen “certain great white fowles with red bills and red legs somewhat bigger than herons which they supposed to be storkes.” Some months later the despoiled Frenchmen had got back to their home port, and they appeared in England with complaint to the king and demand for redress. After an examination of the matter, however, the king was “so moved to pity” by the tale of the distress of the Englishmen, which was shown to be the occasion of their high-handed act, that “he punished not his subjects, but of his own purse made full and royal recompense unto the French.” Which was certainly generous as should become a king. The account of this voyage was the one that Hakluyt travelled two hundred miles on horseback to get from the sole survivor of the company living at the time of his writing, or, in his own words, “to learn the whole truth of this voyage from his own mouth as being the only man now alive that was in this discovery.” He was Thomas Buts, a son of Sir William Buts of Norfolk. Hakluyt relates that upon his return from the voyage Buts was so changed in appearance through the hunger and misery he had undergone that his parents did not recognize him as their son till they found a secret mark on his person, “which was a wart upon one of his knees.” With the accession of Edward the sixth, the boy king, in 1547, new projects began to develop for further discovery northward. Sebastian Cabot was again in England and settled at Bristol. He was now an old man, yet still stalwart in mind and red-blooded for action. His fame was widespread and he had come to be called “The Great Seaman.” While pilot major of Spain, he had, with other achievements, made important discoveries in South America. Heading an expedition originally planned to pursue discovery in the Pacific, through the Strait of Magellan (discovered and passed by that brilliant Portuguese, Fernao de Magalhães, in 1520, who the next year discovered the Philippines), he had explored the River Plate, naming it Rio de la Plata, the Silver River, because of the splendour of the silver ornaments worn by the Indians of the region, and had anchored off the site of the present city of Buenos Ayres; had built a fort at one of the mouths of the Parana and begun a settlement there; had further ascended the Parana; penetrated the Paraguay; and thence entered the Vermejo, where he and his party had a fierce fight with the savages. In Edward’s second year, 1549, he was appointed Grand Pilot of England, with an annual pension of £166 13 and 6 in consideration of the “good and acceptable service done and to be done” by him for the English crown. s. d. Not long after he is found turning from the Northwest Passage and advising a new voyage for the discovery of a Northeast route to India. From this a project of various London merchant adventurers developed which resulted in an expedition in 1553 starting under Sir Hugh Willoughby and continued by Richard Chancellor, which, although failing to find Cathay, made notable discoveries with the opening to Europe of the great empire of Russia.
